Has anyone built an enclosure or found a way to reduce the noise from their chugger pump? Without overheating of course. Surely I am not the only person annoyed by this sound. I recirculate during mash and then whirlpool with it so it is on quite a bit.

Looking good! I am in the process of a very similar build, but I started at the other end. I have done one brew with propane and am going to upgrade to electric very soon. I am still conflicted about whether to go 120v or 240v. I am going to go with a raspberry pi controller using CraftBeerPi.

Are you going to have the doors open while brewing? Not only would I be concerned about the evaporating moisture, but more importantly the Carbon Monoxide. I think you may wish you had gone electric instead. Your set up and garage look awesome! Good luck and enjoy!
