Yessir, the probes are plug-n-play. My CP came with an Auber Instruments brand RTD probe and has worked flawlessly through the dozen or so batches I have done so far.

I use the EBC-SV, which is the single element version of the EBC-III. Works as advertised and was super easy to setup. I wired mine through a Spa Panel GFCI for added protection (a must IMHO) and was good to go.

I'm a big fan of recirculating during the mash and while ramping up to a boil. I do a double crush at .039 and get a good crush with minimal flour. I haven't had any issues with scorching. (Knock on wood). As stated in other posts, a clean element is also very important.

You can get a pretty serious temperature variation under the basket and the basket will restrict the "rolling" motion of the boil. Take that in combination with running the element wide open and scorching is definitely gonna be an issue.
