    Where do you get your cider apples?

    I started an orchard 5 years ago with vintage cider varieties, 20 so far, and will start about 20 more varieties this spring. After the trees produce more than I can use, I plan to sell apples and blended juice to local cyder makers, maybe this fall, but probably fall of 2013.

    there are more wild yeasts inside the apple, than on the skin, both good and bad! proper use of sulpher, based on acidity of the juice, will kill the bad yeasts, and after a period of time, the good yeasts will multiply and take over the fermentation. There are also wild yeasts on your press...

    for my area, i prefer mm111, a large semi-dwarf that is drought tolerant & grows well in heavy clay soils. its my understanding b118 is better up north in extreme cold. dan wombles Western Illinois
