    Amount of lees in batch

    When I make gallon batches, I get about 1/2 inch of lees after primary. That's on the bottom of a 1 gallon apple juice jug. FYI, it's not critical you leave 100% of the lees in primary. It'll be fine if you happen to suck up a little. They'll settle out by the time you're ready.

    Type of plastic. #1 is PET, which is most commonly used for soda bottles. #2 is HDPE, which is most commonly used for milk jugs. These are the only two types of plastic that you can use for long term food storage. Others are prone to leaking chemicals into food over time. (See BPA scare)...

    campden question

    One tablet per gallon. Do not add yeast with the campden. From what I've heard, the least amount of time you need to wait is 18 hours. A full 24 hours is recommended.

    Taste it first. If you think it needs to be more sour, then go ahead and add the acid. Since it's a kit, you'll probably need to add the acid.

    Experimentation and time. I'd start by cutting the sugar, and not the honey. If that's not sweet enough, you may want to back sweeten.

    Won't hurt anything either way. It will still be fine at Christmas one way or the other. Now if you weren't going to drink it until Christmas 2010, you're better off adding the campden.
