    Don't use any CO2 for your cold brew coffee. Just keg it up, hook up the N2 (I do about 32PSI), and serve via a nitro tap after a few days. I get the cascading bubbles and the nice thick and creamy mouthfeel that you'd expect/hope for.

    If that doesn't do the trick, or if the stevia flavor isn't to your liking, look at monk fruit extract as an alternative. Some brands of sugar-free sodas, such as Zevia, use monk fruit extract. I ordered a bag of the white variety and a bag of the brown variety from amazon to do some testing with.

    Don't boil the juice and don't pasteurize. Like you said, just let it ferment all the way. Even after you let it ferment all the way there will still be enough yeast to bottle carb. Also, it won't take 5 months to fully ferment. You can bottle earlier it will probably just be less clear.
