Well I pulled a hydrometer sample, had a nice 1" layer of krausen and 1.055 exactly. I tasted the sample though, and it was quite bitter. Definitely too bitter. I know the bitterness will mellow with age so I'll just not worry about it for now. But if it still tastes pretty bitter after a while...

Don't bother with a 5 gal mash tun. It's probably possible to make it work but it'll be a lot of hassle. I only used my 5 gal tun once before I upgraded. I got a 36 qt cooler for $40 that works great.
