    So essentially, you're saying I should up the DME a bit (to say 8-9 lbs) and hop later in the boil? I'm glad you said what you said in the first reply... I'm looking for 9-10% ABV and around 120 IBU.

    foltster: Yes, it's a 5 gallon recipe. Also, I didn't write it in there, but steep the specialties at 151 for 60 mins. I'll try moving the Simcoe and/or adding them as an additional dry hop. Thanks!
