I preheat my cooler mashtun by going 8-10 degrees past my strike temp. If after 15 minutes I am too high I simply open and stir. It does not take long to get it to drop the few degrees I may be off. Simple and efficient for me.

You'll be fine. I did the same. I did put the pumpkin in the microwave to bring the temp up to 150 degrees before the mash so I didn't have to worry about dropping my temp with cold pumpkin.

The calculations I've seen for evaporation are:
FinalGravity = (InitGravity - 1) * 1000 * InitialVolume / FinalVolume / 1000 + 1
So in your case
(1.040 - 1) * 1000 * 8 / 5 / 1000 + 1
Which is 1.064.
Do I need to use a nylon washer on a threaded ball lock disconnect? It seems the disconnect has a plastic end that the nylon washer does not fit on as nicely as the metal threaded fittings of say the gas distributor.
