I've missed everyone and just wanted to drop in and say hi. My dad had a relapse with his cancer so it's taken a lot of time out of hobbies and I really had to step back from much of my blogging and posting elsewhere. So, I hope everyone's been great. I didn't get to compete yet this year...

Like both of mine so far, it's running hot so gotta just let it age out. Needs racking this weekend and will see from there. Chai dropped put a bit so will be doing an addition for that one need to check coffee again and will probably cold press more just in case.

Could go salted caramel maybe. Tough call. Getting ready to rack and probably backsweeten today. They both look really good so I'm hoping flavors are still on. If not I'm hoping to adjust that by racking in more cold press coffee/cocoa and chai spices. Don't want to run too much tea in...

Insanely volatile ferments subsided so racked out to carboy. Lost half a gallon on the milk version with blow off plus serious curds but its looking awesome. Here they are today.

Mine are towel wrapped, one in the bathtub for obvious explosive blow off reasons and the other in the kitchen. Kitchen is about 70 (heat is on we've got frigid temps again) and bathroom is 65 (since it's sitting in an ancient porcelain tub) and that's not slowing anything up there! Right...
