    substituting summit for warrior

I brewed a DFH 90 min clone yesterday that was supposed to use amarillo, simcoe and warrior hops. Unfortunately, Brewmasters Warehouse shipped me summit hops instead of warrior. I brewed it anyway, using the summit early in the boil hoping I wouldn't get too much of the summit flavor. I guess my...

    Max mash capacity?

I just got done building the Rubbermaid 10 gal MLT also and had the opposite question. What's the minimum amount of grain I could mash? Would 5 or 6 pounds be alright? I'm not quite ready for AG. I still need a bigger pot and some way to cool the wort (with my 98 degree tap water:( ) So in the...

    Gravity still too high

OK, you guys are scaring me. All my bottles are now in the tub, covered with a towel. How soon before they blow? I was going to wait a week before I opened one. Should I pop one open sooner? Or should I RDWHACB? (CB = craft brew. I don't have any homebrew yet)

    Gravity still too high

Well, I called the guy at my LHBS(or is it LHS?) and he said to go ahead and bottle it. If I get bottle bombs, I can blame him I guess. I'm just glad it's in bottles so I can start on my next batch.:)

    Gravity still too high

I wanted to bottle today but the gravity is still at 020 when it's supposed to be 012. It's a True Brew IPA kit. 2 cans amber LME 6.6lbs. 1 lb. Crystal malt steeped 30 min. chinook and cascade hops muntons dry ale yeast I also dry hopped with more cascade. BG was 050. Primary for 1...

    Bottle temp. vs. secondary temp.

I wasn't really thinking about expansion. I was thinking that the warmer temp. would lead to more vigorous yeast activity. I guess that as long as they have the right amount of food, the temp shouldn't matter. Right?

    Bottle temp. vs. secondary temp.

My first batch has been in the secondary for 2 weeks at ~70° in my fermentation chiller. I want to bottle it now but it's about 82° in the house. Is it ok to bottle condition at that temperature? Should I bring the secondary temperature up before I bottle? I'm just afraid of making bottle bombs.

    Carbonation in secondary

It's an IPA kit from True Brew. 1 lb. Crystal grain steeped for 30 min. 2 cans Amber LME(6.6lb.s?) 1 oz. Chinook pellets for bittering 1 oz. Cascade pellets last 5 min. 1/2 oz. toasted oak chips which I didn't use Partial boil of ~2.5 Gal. Yeast is Muntons Ale yeast (dry) pitched at 70°...

    Carbonation in secondary

Thanks for the replies. OG was 1.050 and FG is supposed to be 1.012. Readings have been taken at the calibrated temperature of 68°. I did taste the sample and it tasted pretty good, a little too sweet, but good otherwise. Thanks for the tip on spinning the hydrometer. I'll try that next time. I...

    Carbonation in secondary

Ok, I thought my first brew was going well despite my various screw-ups (see my other thread). It's been in the secondary for a week so I thought I would take a sample for a hydrometer reading. I took a sample with my thief and it has quite a bit of carbonation already. That's not...

How bad did I screw up?

My BG was 1.051 and FG is supposed to end up at 1.012 - 1.014 I thought IPA's were supposed to be hoppy and higher alcohol content. This kit seems like neither. P.S. Do you all get as thirsty as I do when you read or write about beer?:)

How bad did I screw up?

Wow, thanks for the quick reply. One more question, is 1 oz. of Chinook pellets for 45 min. and 1 oz. of Cascade pellets for the last 2 min. enough to give "massive hops flavor"?

How bad did I screw up?

This is my first attempt at this. I'm brewing from a kit, an IPA from True Brew. Here's what I've screwed up so far. 1. I covered the pot during the boil. I don't remember reading anything about that in The Joy of Home Brewing but I did read that it's bad at howtobrew.com(after the fact, of...

    Hey everyone

Hi, Great forum, I'm glad I found it. I'm working on my first brew right now. My wife gave me a kit for my Birthday. How cool is she?!! I also roast my own coffee and I made my own maple syrup when I lived in Vermont (now in Phoenix). I guess making my own beer was inevitable. Thomas
