Hey all - I just wanted to give an update regarding this beer. I brewed it around Sept (?) last year and posted a few times in this thread. Since then, I've grown to absolutely positively LOVE this recipe. It's probably my favorite homebrew recipe I've brewed so far and definitely compares...
Here were my hop additions. I know that IBU calculations are notoriously fickle, but this is what got me to 34 IBUs.
Columbus 14% 0.5 ounces - 60 mins
Cascade 5.5% 0.5 ounces - 20 mins
Cascade 5.5% .25 ounces - 10 mins
Columbus 14% .25 ounces - 0 mins

So I ended up getting impatient and bottling the bastard. It dropped to 1.003 - so I was only a point off from the recipe. The dang thing was in the fermenter for a full month and was still active....crazy.
I bottled it about a week ago. Couldn't help myself and popped a bottle after only 4...

I did make one other change, and that was to reduce the IBUs to the 34-36 range. This may have been a mistake....I tasted the wort before putting it in the fermenter and it tasted a little sweeter than I would have liked. We'll see...

Brewed this 5 days ago. I followed the recipe exactly except for the following changes:
1) Mashed for 90 minutes instead of 60
2) Added about 13-14 ounces of honey instead of 16
3) Cooled the wort to 74 degrees before pitching yeast

Thanks! Yes, I did take the SRM reading from a test vial so that could definitely skew my perception. I did add the molasses - in fact, I didn't make any changes to the recipe and basically hit my OG (one point off).

Brewed this 12 days ago and it's sitting in my primary fermenter. Still getting bubbles out of the airlock at the rate of one every 45 seconds. Took a hydrometer reading and its sitting at 1.015, so I'll keep it there another few days. Taking longer in the primary than I ancitipated....

Unless I'm reading the OP wrong, it says he mashed at 147 to get his OG. I mashed at 147 for 90 mins. After first sparge, I added ~165 degree water for a 10 minute second sparge.
