    You can also look around locally for a single stage barn fan control Any electric or agriculture supply can get them for you. Can-arm and Honeywell are two brands that I have used to convert freezers with excellent results.

    I've done that and it works well. I've also used hopped DME along with a kit with good results.

    corn sugar/dextrose

    Table sugar works well. Acid in the apple juice works to invert common cane sugar.

    lalvin 1118 is my favorite for sstraight apple juice. It brews out dry and doesn't need much aging. Lalvin 1116 is good with a cran-apple mix. It takes a bit longer to brew though. Years ago, I played with Doric dried ale yeast. It was ok, but it smelled awful until it had aged about 8...

    Thanks for the welcome. I'm in the Sault ste Marie area. IH made fridges in the '40s and '50s This thing weighs a ton, and isnt very energy efficient, but you have to admit, it's pretty cool.
