    1) You might struggle to hold mash temp with such a large kettle. Also, it might be tough getting a 2.5 gallon batch in a 4 gallon kettle if you don't plan on sparging. You need to account for grain displacement, grain absorption and boil-off. It might be safer to step it down to a 2 gallon...

    Just had my first bottle of homebrew...

    I called my LHBS when i ran into (what i thought was a) snag, and he give me the lowdown on fermentation and bottling. Luckily, that "snag" occurred because if i had followed the kit, I would have been bottling by day 5 and drinking it by day 19.

    I brewed an American Cream Ale kit from brewer's best about 6 weeks ago. I tried my first one today. I was shooting for a beer that was drinkable, but this beer turned out more than drinkable; it is freaking delicious. Consider me hooked!

    Good point. I just hope they don't contribute to an unwanted bitter taste as somebody mentioned above, which is why I was considering a secondary.

    Well, my brew buddy got impatient and dumped it all into the primary, so we stuck with it in. I guess I will remove the peels when racking to my secondary, but I don't know if this will do anything.

    Yeah, I used my dishwasher to clean and dry my bottles for my first batch, and like you, my ice bath did the job. My kit was very limited; I was using a long paint stirrer from home depot to stir because I didn't have a long enough spoon. So, at this point I am looking for the little things...

    Can all grain brewing be done with a 5 gallon brew pot?

    Lots of options it seems. A couple of you referenced Beersmith to figure out the appropriate amount of ingredients. I downloaded the trial version and was a little lost. I'll tinker around with it again after work, and hopefully I'll fully understand it soon.
