So this might be a stupid question but here it goes. So I mashed all my grains, then I strained them. Just getting ready to boil but I had to leave (very unfortunately). So my question is can I just come back start my boil and everything will be fine? Or should I just throw away all the wort?

I'm probably not going to help much. But I wanted to say I know what you mean, I'm also a fan of a good malty beer but I think If you get out and drink different styles you'll find a bitter beer you like or one you can grow too like. With that said I never got a rule book with my beer or beer...

Ok. Thank you for the help one more question if I can. dropping it to lagering temps right away like you do, will I still be able to bottle carb or can I only do that if I keg?

I'm brewing my first lager and was wondering if doing your rest too late has any negative effects on the beer. I raised the temperate to 68 two days ago but I think fermentation was already done should I just transfer now and drop the temp back down?
