    +1 Open fermentation is still practiced by some commercial breweries. I sometimes just use plastic wrap.

    My guess would be the Coopers Canadian Blonde is slightly more bitter than the Brewhouse premium American lager (aka Budweiser). The beer is still young. The flavors will mellow with age.

    If you are filling your carboy all the way up to the top, you will need a blow-off tube. Did the dudes at local brew shop tell you that?

    Try releasing some of the gas from a couple of bottles and resealing before putting in the refrigerator. It doesn't sound like you bottled prematurely but it is worth a shot.

    It is a hybrid yeast for the Cerveza. So you should be safe either way.

    I prefer the Saaz over the Willamette with that beer. It is proving to be a great summer session beer (aka lawnmower lager). I don't know what hops Sam Adams uses. Willamette tastes earthy to me -- perfect for English ales. Are you thinking of using both? It's up to your palate!

    True. It works best if you start at 70F and work down to 60 from there over the next 24 hours. But the OP should be fine regardless.
