I would rethink using a typical 1/2 barrel kegerator. You will be limited on how many beers you could serve. Most only have a single tap tower and room for one 1/2 barrel or two cornies. I would recomend putting a chest freezer (the bigger the better) behind the bar wall and running the lines...

If your mash is retaining lots of water it sounds like it's your braid system may be plugging. I'm not very knowledgable in this field, so maybe someone could focus on clearing a stuck braid.
When you clean the grain from your mash tun is the grain fairly dry or do you have lot's of water in it? Maybe your mash is getting stuck during the sparge and you're assuming it is done. Good luck, and keep us posted.
I've been brewing for a few years now, all grain and all keg. I live in the Grand Ledge area which has a brew supply store (The Red Salamander). I've enjoyed viewing this site for sometime now and finally joined. Cheers - Tom
