    I just got 13 pounds of tart cherries to add to a one year old lambic for a kriek. Is it ok to use a bucket as the secondary fermenter? I am worried I might end up making cherry vinegar. I put the cherries in the freezer so getting them into a carboy might be a real pain. Any help would be...

    Does Brett flavor increase w/ serving temp.

    I have a PLambic fermented with Roeselare that is about 9 months old. I sampled it yesterday and it has too much Brett flavor. My wife says it smells like a wet goat. I am wondering if this is because the sample was 68 deg. Will the brett be less pronounced at serving temp?

    Side by side refrigerator conversion?

    I have finished mine and It works great for Ales. I can't get it cold enough in the spring and summer for lagers. Hopefully I can try my hand at a lager this winter. If anyone wants any tips on how to convert this fridge let me know.

    Dry hop in keg ?

    Any aroma hop works. Some people even use high AA hops like Zeus. You should be fine with Hallertau.

    Check out the brew infuser on northern brewer. Its stainless mesh like a tea ball but can be slipped through the neck of a carboy or put in a keg. Personally I just sanitize a mesh bag and marbles add some hops and let it sink in the keg. I get it back out when its empty.

    I thought the whole point of a dual stage was to control two areas at the same time. Or heating and cooling of one area. If not why does it have two temp probes. I could be wrong but if anyone knows if this is possible and what the parameters need to be set at it would be very helpful.

    According to DWYER INSTRUMENTS where I bought my love controller. The pvc probe can only read a max temp of 105 deg. Neither can be immersed. So as long as you are using the probe for fermenting or a keezer you should be fine with pvc.
