    Thanks @CKuhns for your preferences :) I'm planning to stop fermentation using pasteurisation at 1,005 hoping there will be enough co2 to have a light sparkling cider. Started to ferment in bottle at 1,010. Now I'm near 1,007 so I think next week I'll do the pasteurisation. Thank you!

    Hi all! I've bottled last week my cider batch at about 1,010 sg. When the sg will be at 1.005 I would pasteurize them. The question is...     Thank you @Kees, well I'm not a cider expert but someone more expert than me tasted the cider and told me that it has not so much acidity and persistance in mouth. Could I add malic acid at the end of fermentation or should I add before or during fermentation? Thank you again.
