Oh... I had the same question about the raisins, so I'll be bottling my 2gal from 2015, in a couple months, and then making more, tonight or tomorrow :D

So I just poured 2gal into 1gal jugs, and had to top up with tap water... and I noticed this grossness floating on the top of the jugs (didn't pay attention to the carboy). If it helps put things in perspective, 2 gal of wine was in a 3gal jug for 10 days (life got busy at 7 days)

So the preservatives don't hurt the end product? I'll see if I can get them from a health food store, will probably have the least amount of additional junk on them - but I doubt I can find natural raisins in my lame city.

Finally made this, earlier this week. It's fermenting like MAD! I've waded through some of the pages, but didn't find a good source of golden raisins without sulphites or preservatives. I don't own a dehydrator, so I'm assuming they're something I can get at some hippy store? Based on all...

There's not much other than food-coloring that would redden a beer without also darkening it. Sounds like to need to rebrew for your comp :/

Oh yeah... sorry, I was commenting on CSI's post, and I completely missed that part from yours (derp) Perfect! I have several kegs lined up for the fall/winter, so I'm looking to brew stuff with longer aging, so this is perfect. I'll crack the keg next winter :)

Thank you for the awesome write-up! I'm going to be making this in a few days, once the fermentation chamber is rebuilt. Any comments on aging time. Aging 60 days seems a tad short for such a big beer (but don't think I won't start sampling!). I've seen other posts that say to age this beer...
