Yes, you're missing something. The graph starts at 1:20pm on May 6th. Fermentation doesn't really kick off until around 11:00am the next day. Flat line doesn't occur until May 12.

If you are bottle priming your beer, the sugar used for carbonation must also be considered in the final ABV calculation. I generally find that it increases the ABV by about .25%. Some people overlook this.
