    1st beer by myself

Thank you for your encouragement. I feel better about it now. After the flurry of initial comments I felt like everyone was saying my beer was ruined and I'm an idiot. It is bubbling away so something is fermenting. I really did it more for the fun of it and fermenting something new. Thx

    Hard cinnamon cider

That's super high gravity. I don't know if the yeast will start in that. If they don't you may need a starter. Also its a lot of cinnamon. I've found 1 stick per gallon to be a lot. Next time I'm gonna use only a half of a stick. But other than that if it ferments dry you will have very...

    1st beer by myself

Well I guess I goofed. That's what I get for winging it. Could I add more dme? Would this make it better. Also I tasted it and it didn't taste astringent at all. I do however like astringent things like barley tea strong black tea etc. It just tasted like malty sweet with hoppy finish

    First applejack....mmmmm

Yes you will concentrate methanol. But methanol is already produced in home brew cider you use for this. Drinking the jack is the same as drinking 3 times the volume in cider. If you can drink 3 ciders fine you can drink the equivalent volume of jack just as well. Also the reason methanol is...

    First applejack....mmmmm

It was pretty simple. Froze cider in plastic bottles then simply inverted them and let it drain into a pot then collected the liquid till ice was mostly white and no longer had color in it. Then bottled the concentrated cider. Boom apple jack
