    Don't Do That.

This is more of a "Don't let that happen" rather than a "Don't do that." I was brewing today (an electric system) and while chilling through a CFC, it seemed as if the temperature was dropping slower than I expected, even after I switched to recirculating ice water. After transferring the wort...

What no one wants to say

Pre-Covid, I had two homebrew shops within 15 minutes of me. Now both have gone away. The first was part of a hardware store that had a very good homebrew section. They decided to close rather than sign a long-term lease. The second opened a brewery in part of their shop and then decided to...

    Boil length

I mostly brew lagers with pilsner malt so I boil 90 minutes. That was the conventional wisdom at one time, and even though it may no longer be, it works for me. If I'm brewing with pale ale malt I'll usually boil for 60 minutes.

    So who's brewing this weekend?

I brewed 11.5 gallons (into the fermenter) of Festbier today. We do a decotion for this beer (the only beer I do that for) and it ended up being an 8-1/2 hour brew day. Ugh! I brew this for an Oktoberfest party. We've pretty much decided this will be the last one so I'll probably never do...

    What brewery are you visiting?

We visited Wellspent Brewing in St. Louis yesterday. They're closing on June 29. It's a bit sad, I've always enjoyed their beers and they usually have a wider variety of styles that you don't see in a lot of places. But they're not in the best location, and it was rarely busy when we stopped by...

    What's your "burn" rate?

My wife reminded me of a fourth batch I dumped. I brewed a Saison using the DuPont yeast. I couldn't get it to finish so I ended up putting it in our downstairs bathroom with a space heater to raise the temp. I had that beer up to the 90's. Of course, this was in the summer during a heat wave...

    What's your "burn" rate?

I've been brewing over 30 years and can only remember dumping 3 batches. The first was when I went to add Polyclar and grabbed the wrong container and added a cleaner. I realized right away what I had done and no one drank any. The second was a club barrel project. It soured in the barrel. It...

Need ideas for stovetop brewing smell

I still have my Bayou Classic. I bought off Amazon in 2011. It was $62 then, now $93. So 50% more.
