    Well, I didn't add any sugar and my OG was 1.053. I dont know if I can repeat this batch cause I think that goodness is in the variety of apples in the cider. Otherwise I didn't do much but pitch yeast and add yeast nutrient. The experiment is a good suggestion though!

    The main thing I am concerned about is my yeast...I assume it is viable, even though I still have seen no activity or anything. I was expecting it to behave more like when you proof yeast for bread or something to make sure it is alive.

    Yeah, I like wheat in general, but this starter is actually for an ESB, so it's definitely out of place. However, I doubt my taste buds will be able to detect the difference. That said, I will probably try to decant what I can.

    Yeah, I really have no idea how these guys got in. It seems like it would be very acrobatic. They really went to town. I also had some seeds in there, and I found them all over the house, even in the bed!
