    Ecy20

That sounds very similar to my experience last year. I don't have a pH meter but when racking to secondary after a few weeks they were already very sour and fruity.

    Ecy20

I have done a few batches with Ecy20 from late 2014, they have all been very sour. I was using about half a vial for 5 gallons.

pitch sacc on 5 month old roe cake?

I would do some sacc. I've done it both ways and always prefer the one that has some fresh sacc.

Decibel Brewing Company - Bothell WA

The last few years a friend and I have been planing a brewery and tasting room. Things are starting to actually get close so I figured I would post about it here, hopefully for advertising and answering any questions people have about doing this. Beer thief vs. turkey baster for samples

Just don't be dumb and let this happen like I did. The bottom half of my baster fell off into a year old sour. Seems to taste good still.

    bug country 2014

Just took a sample of a beer I brewed back in January with this beer. Still very lemony and light bodied. a just a bit of earth brett funk in the background. aroma has a lot of hay. Pretty good beer but much milder in flavor than I expected. Unfortunately I dropped the bottom half of the...

    3711 in a wit?

I've been drinking off this a few weeks now and figured I should comment. Flavor and aroma very zest forward. With a bit of fruity esters from the yeast. Taste very orange and lemon with just a hint of coriander spice. The citrus of the coriander fits in very well. Wheat flavor is still...

    Jolly Pumpkin dregs

Cracked into the first bottle today. Good carbonation, head drops pretty quick. Very tart, a bit of cherry like Brett character didn't pick up before. Earthy and fruity. A bit of cheerio character that will hopefully drop out soon.

    Cider with Saison yeast?

I have made a handful of ciders using left over ale yeast and store bought juice. I kegged some treetop fermented with 3711 yesterday, tasted pretty great at gravity reading.

    3711 in a wit?

Kegged this guy up today. 1.042 down to 1.005, I was surprised at first it was that high but I usually mash lower and add simple sugars with 3711. Wonderful aroma of orange zest and coriander. Flavor is very citrus forward with a slight candied lemon flavor, there is also nice wheat and...
