    That's a very good point. I suppose with a more complex grain bill and a new process it would be harder to pinpoint what happened if something did go wrong. I should also add that i'm planning on using WYeast 2206 Bavarian Lager Yeast for this brew

    I know I know :) I work full time and i'm doing my MBA so I don't always have time to have something on the go. When I do it's usually a brew day of 2 - 3 beers and then I don't brew again for 3 - 4 months.
