    Well actually specific gravity is measuring more than just the fermentable sugar content of the beer. It's really just comparing the density of whatever you're measuring to the density of water (1.000). Those extra points are just measuring the other components of the beer besides fermentables...

    If you're really worried about the quality of beer made with extracts, then start worrying about the quality of your extract. Briess and Northwestern both make great LME and don't adulterate it in any way. As for FAN, just get some WYeast nutrient. It's great stuff.

    they'll also oxidize in there. the best bet is just to keep them in an airtight package, in a cool dark place. vaccum sealing is a good way to go. I do that and just keep stuff under my counter. Never had a problem. Also never bought more than I would use in two months...

    The most boneheaded thing I've done is just getting too drunk when brewing and splashing things around, or the worst which is forgetting to sanitize something. strangely I've never had a contamination problem. just lucky i guess.
