    I believe the main deterrent in using herbal teas is the oils. Oils will kill your SCOBY. I'd use 75% black and/or green, and 25% other tea. Next on my list is 25% elderberry, very good for you and has some natural sugar. Have you experimented with white tea? Not sure about the Camellia sinensis...

    Kombucha cocktails

    Kombucha naturally makes alcohol, I think they can hang out. I admit, I regularly take a flask of home brewed kombucha into a bar, order a shot of whisky, and mix them together. It's just delicious.

    when i bottle it i add just a little ginger and honey (this is especially great for turning around a vinegary batch.) after a couple days of air tight brewing, you'll have a very fizzy drank.
