My 2 cents, 21 days in ferment you will be fine. I think the only miss haps were taking FG reading after priming sugar and not enough wort in your reading vessel. non of which are going to give you reason for concern. Cheers!

My old system in cooler style mash tun had a domed false bottom but the bottom nut was quite large with big groves like a castle nut. I had a couple stuck mashes if I got in a hurry. I started using rice hulls and didn't have an issue again.

I also use a hop spider, and do the same as Dancy said above, plenty of time during the boil to give it a few lifts in and out of the boil kettle to help disperse the hop oils.
