Commercial walk-in insulation varies. The company I work for uses spray foam closed cell insulation. Other companies use polystyrene. If you can get R-25 or above, that would be very good. More importantly, make sure the walk-in is air tight. Any air leakes will led to condensation and...
I am using a recipe very close to Wisco's with a pound of citra for a 5 gallon batch. I saved 5 ounces for dry hopping in 2 stages. Tonight was my final hop addition and I can detect that slight onion flavor. That flavor was not there before dry hopping. Right after fermentation it tasted of...
I was about to add my second batch of dry hops to a Pliny clone recipe when I discovered this wierd stuff floating in my fermenter. I am using a muslin bag for dry hopping. I soaked the bag in Starsan before adding it to the fermenter. This is a secondary fermenter so I can't imagine the...
The grains definitely take a back seat, so I think your grain bill looks good.
I had .5 oz bittering at 60 min. and I wish I didn't. Mine starts off slightly bitter. Pseudo doesn't have a bitter bone in her body.
I really think you are on target for your hop schedule. I wish you the best of luck.
My attempt at Pseudo seems a little too bitter, light on citrus flavors. Think I'll keep the .5 FWH then add everything else after flame out.
Here is a photo of the skin that formed on top of my fermenter. I used the actual Pseudo yeast harvested from their bottles. Skin was 1/2" thick and...
Here's what I did.
.5 oz mash
.5 oz 20 min.
1 oz. Flame out
2 oz when wort cooled to 160 (whirlpool)
I am reserving 2 oz for dry hopping in 1 week. Not sure if I should dry hop with 1 or 2 oz. I am leaning towards 2, what the he'll!
Any feedback would be great.

I have confirmed from the brewer that no hopback is used in the making of PseudoSue....there goes that idea.
I have my own batch fermenting at the moment, I call it "SortaSue". I am using the actual Pseudo yeast from their bottles. So far the vapor lock smells amazing. I'll post some tasting...
