    My Super Efficient 5-Gallon Mash Lauter Tun

    It looks like the flexible tubing is in a recessed/channel portion of the cooler. Otherwise your correct in the appearance that the manafold looks elivated from the bottom. I am going to Lowes to build one of these and will post the supplies used.
