I just started using it recently and I am having the same issues of taking forever and not fermenting out completely. I am thinking about quitting using it. I started fermentation at 62F and moved up to 70F after a week. It still does not ferment out completely.

I do not know how Firestone got so popular on Double Barrel Ale and 805. One is musty and the other a wannabe micro beer. These also happen to be on tap before any of their palatable beers. I would like to support local, but not this one.

I use 10% Munich II in my Pale/IPA with a little Belgian biscuit and oats. I am not sure if the biscuit is redundant, but this is my house IPA/"EPA". I have played with yeast and hops, but this is my go to grain bill. Don't be afraid to commit to more Munich.
