Using Safale T58 to ferment more sugars

I thought about it more and took your advise. Ill let it sit for awhile longer. I knew I should have bought another fermenter. Yes I did add oxygen and a starter to the beer. Should have seen it at day two, couldn't keep an air lock on it. Will I have a problem bottle carbing due to the...

Using Safale T58 to ferment more sugars

So my IIPA has been in the fermenter for 2 weeks. I just took my third test and its seems to be stable at about 1.025(OG1.104) using Wyeast1099. On tasting it though, it alittle sweet for me. I went down to my LHBS and told them i was looking for a yeast to ferment more of the sugars out. I...

Yeah I made a 5L starter but the 1099 only ferments to 10% ABV. Maybe have to pitch something later after it stops fermenting. Maybe Notty

    Yeah for brew day!

Well it's in the fermenter after a slight mishap of spilling about a liter tring to get off the stove. Anyway came in at a staggering 1.104 maybe slightly over. Yikes that Wyeast 1099 ain't going to make it.

    Making large amounts of yeast

Thank you Hairy Dog. I had a feeling that might be the answer since i didnt find any theads on it. After I read Rj's last post I decided to make a gallon size starter from the 2 liter of yeast. I tried to get as much air in as possible without a stir plate. Ended up with about 1/4 inch or so...
