I read on a thread for a different topic on now how someone steeped their specialty grains in a different method I never heard of. there were no comments to it so I wanted to pose one direct to it.

In all the recipes I have seen they say to use 155-170 F water to rinse the specialty grains after steeping and then add to the wort. Would there be problems if rinsing them with room temperature water 70 F? Just so I do not need to heat 2 pots of water??
Almost all of the kit recipes I have seen say "after the beer is done fermenting go right to bottling". Now some friends, who have been doing this for 20+ years, say that is BS. They say after fermenting you rack and let stand for another 1-2 weeks.
I am curious what the pros can cons are...
