Please correct me if I'm wrong, but won't an airlock work counter-productive in this instance, as the point of that is to keep out wild yeasts while allowing off-gassing?

Hey all, new to the forum as a member and poster, but been reading for a while and decided to join the fray.
I just bought 2 lbs of honey from a local apiary, and I wanted to make a cyser that isn't super dry, still retains some of the sweetness while still having a good abv%.
