    Hop replacement

    It's a persimmon beer, think rye ale but smoother and with a more bitter or oak taste. I make it from all the stuff I grow in the back yard. I have some Mt Hood, I think I will add them to get the earthy bit and risk the high spice. Let me know if you think I'm crazy. =)

    Spice it up or leave it alone?

    I'm against it. Doesn't seem like a natural flavor extension or compliment. Personally for spice additions I usually start with a base brown ale recipe and go wild from there. =)

    Do you all think there will be a significant change in an ale recipe if I replace Vanguard/Glacier with Northern Brewer/Cascade. I just happen to have those hosp here when I got a bug to brew this morning. JT
