Yeah the elbow is possibly concerning but I overlapped the joint so there is some overlapping structure on either side of it so... fingers crossed :) The winner was planning to use it eventually so I suppose I'll find out one way or the other :tank:.

For lower gravity ciders (say ~7% and lower) I've found that champagne yeast tends to dry it out to much for most peoples taste buds (I like it but the boss tends to be grumpy :D).
Have had good success with US-04 for dry yeast and make a really fantastic batch with white labs "farmhouse blend"...
Completely anecdotal but just for the record here's what I did and how it worked out.
When I built my coffin I put a frame around the corners of the freezer to stand the skin off by about 3/8" (so not a lot but some) and left air gaps of the same size at the back and bottom of the side panels...
