    Fermentation can take 24 to 72 hrs to show visible signs.

    Can it last a few days? I read somewhere that fermentation usually takes place in 12 hours and can continue over the next few days.

    Bottling Sanitation

    I had the same question. I read that you can use something like soda bottles (or plastic bottles that underwent pressure) provided that they are sanitized. (Source: alcohol fermentation) So it's not really an issue of safety?
