    Just brewed an IPA and I'm trying to match Tree House's Julius. There's going to be a lot of dry hopping with Citra in the future.

    should I be worried

    I can't help myself. I always open a bottle before it's ready (usually 3 weeks after bottling). At that point I realize it always needs about another week. I wouldn't worry about it yet - just give it some time to finish.

    Oktoberfest

    I got this recipe from my LHBS and I'm making a double batch today. I've made it with Muntons Gold yeast before and with S-04 another time - both with good results. Oktoberfest 3.3 lb Muntons light LME 3.3 lb Muntons amber LME 1/8 lb Crystal malt 1/2 lb light Munich malt 1oz Hallertau...

    Chocolate Cranberry Wheat

    I'm not sure if it was the cranberries or not, but I made a chocolate-cranberry stout recently that was so astringent, it was undrinkable (5 gallons of it). It might be worth splitting the batch into more than one secondary and try different amounts of cranberries.

    Looking for All Extract Porter Recipe

    I'm making a 5 gallon batch of this right now and I'm wondering about the vanilla. Would it really be noticeable if I didn't rack it to a secondary and just added it to the wort? Alaskana, thanks for keeping the post alive - I would have missed it otherwise!
