feel for you. Moved to a new place this year so starting all over on the orchard. Last one was 14 years old so just started to produce well and then said goodbye.

than you have broken a cardinal rule of Joe's. But yes, that should indeed let you push up the alcohol.

    Joe's Ancient Orange Mead

Please let us know how that comes out? I suspect it will be very sweet as I have only been able to get the bread yeast up to about 11% (and usually closer to 8%) before they peter out.

It is a high hydration dough. I measured correctly but the starter is always a variable as I don't measure when I add replacement water and flour to my starter jar. Thus the starter can have more or less hydration on a given batch. And that can be significant as my biga is 250 gr starter, 180...

to the master bakers out there. I had a new "problem" today and hope someone might have some insight. I have been making my sourdough recipe for years. I use a kitchenaide. When it is just right it will stick to the bottom of the bowl for the first 6 or so minutes of kneading. then in the...

    Rhubarb Wine

When I have made it I add the yeast a day after adding the Camden tabs. I then open ferment in the bucket for 2 or 3 days (depends on my schedule and time availability) before pulling the bag of mush, putting in a colander and squeezing all I can, and then moving the juice to a carboy and...

that is beautiful. Look at the blue ski, fresh snow, I am sure the air is crisp and clean. And days like that give me a reason to jump on the tractor and clean out my 1/2 mile lane. Something fun about rolling snow.

Come on over, bring your mix. I have been using my backhoe to try and dig out a french drain and keep hitting mud rock. A little of your mix would really help loosen things up and make it go much more quickly

Then I suppose using rolls of toilet paper soaked in gas and plastic bags filled with oxygen and acetylene like I do is also frowned upon?

    Joe's Ancient Orange Mead

Since you are not worried about head I would not worry about sunflower oil on the raisins, but I have no idea why they put sunflower oil on raisins. I don't know those brands of yeast but they should work. Yeast wants to eat sugars. All bread yeast is from the same family. I suspect you...

    Joe's Ancient Orange Mead

This one has me baffled. I have made one or two batches of this every year for 8 or 9 years. Always acted like it should. This batch will not clear. It is 6 months old. I took a sample and the bread yeast was a monster. Final gravity 1.010, giving an 11% ABV. I even tried cold crashing...
