I have had this happen before. Turns out I didn't have the lid on my fermenter on all the way and the CO2 was leaking out. Snapped the lid back on all the way and the air lock started bubbling. Prost!
I just leave the HLT on the stove and use a 1 gallon pitcher to ladel the hot water on top of a tupperware lid floating about 1 inch above the top of the grain bed. I average about 75% eff. with this method. Don't have to the HLT tank anywhere.
I rock a 5 gal igloo. I've packed 14# in there. Real thick. About 1.080 is the highest OG I can get. If I need to brew higher than that I just make it up with extract. 1.080 to 1.012 is about 9.3 abv. that covers most beers.
I've had a fementation chamber grow mold. Little bleach and some scrubbing cleared it up. Also I've had a floatie or two. I scooped them out and drank the beer. No problems. It tasted great. We called it the moldy brew.

I agree to that. I remember knocking out 4 brews in one saturday afternoon. Using mine and a buddy's equipment. Without a WC there is no way we'd have been able to do that.
Yes 1lb of Crystal 90L and .5lb Crystal 60L are fermentable, steeping them for 30 min @151 should do the trick.
Don't worry about the .003 gravity points. Differences in process equipment.... can cause this. If there was a 20 point different, then I'd worry.

I have brewed this recipe several times. I has turned out really well. I use all pellet. If the hops you are using have a higher/lower percentage than the alpha acid percentage in the recipe you'll have to adjust the amount you use.
