    East coast yeast Bug County shelf life (ECY20)

    Any luck with this? 5 days ago i put ECY02, that was a year after expire, into small 1.040 (1 litre-ish) wort. Gave it a few small swirls and today it has pretty sizeable bubbling 1/4inch krausen on it. i didnt think any sacc would be alive, but it doesnt really look like just brett imo...

    Did you manage to bring it back to life? I have ecy02 thats over a year past use by - hoping i can bring it back to life with multistep starter, be interested if you managed too!

    Adding acidity into brett porter

    I loved it man! I put it in secondary after fermentation had completed, for 23litres i did 250g of flaked coconut in, i put it in the oven low heat for 10min and then put in hop bag and then tasted it each day, left it in there 9 days. Good luck!

    Ah i hadnt thought of just adding some lactic acid, thats not a bad idea at all! Ill try that out and see how it tastes, thanks!

    Hey guys, So i made a robust porter, did most of it on coconut but put aside 5litres and added brett lambicus and been aging for 5months now. Had my first taste yesterday, tastes ok, slightly cherry, but i think to get it much better a slight amount of acidity would do wonders. So wondering...
