Cider Tastes Sour and smells horrible

Update on starting on minced apples that didn't go through the press. Statred 23rd Oct and four days on the mush. Put through a straining bag, but only had a rough one and left the cider thickish and very cloudy. It was working well, though so I left it until today 6th Nov and poured it through...

    First timer question

Hi there. I wouldn't boil the apple juice or even add the sugar water while hot because heat and sugar makes the apples form pectin... I make jam and boil the fruit and sugar to get pectin to set the jam. Making cider with boiled fruit can cause what CvilleKevin said...cloudy brew or 'pectin...

Cider Tastes Sour and smells horrible

Hi Sportscazy2 I am new to the forums but I have made wine and cider on and off for years. If you put it through a press then it will clear fairly quickly (that is usually what I do) but this years I did a short cut and minced the apples then started it on the mush for 4 days. Still can't find my way around the comments.

Thanks... I'll get the hang of it soon. Just a little question.... can beer yeast be used for..say... a cider? Or is it only good for ales and stouts and things? I understand wine yeasts pretty good... but have no knowledge of beer yeasts. Val

My stout has a very bitter after taste.

DO NOT BOTTLE UNTIL IT'S COMPLETELY FINISHED FERMENTING! If you bottle too soon you'll end up with exploding bottles. ****** Yep, been there, done that with wine... I still have a mark on my leg from years ago when I put a bottle on the floor (luckily) and it blew! Thanks for the advice... I...

My stout has a very bitter after taste.

Ah, thanks. I know homemade wine changes with maturity (over a long period of months or even years, but I wasn't sure about brewing beers and stouts. This is a kit and says to bottle after 10 days when fermentation slows to a stop but it appears it may be better to rack it into a second...

My stout has a very bitter after taste.

I made wine for years but never brewed beer. I made my first kit yesterday...I think I did a few things wrong (I can NEVER follow a recipe without adding to it) Followed the instructions for Young's Harvest Stout.. THEN boiled up a jar of 750g Pure Cane Molasses and a jar of Malt Extract from...
