    How long can my sanitized bottles sit?

    Yeast choice question for my Hefeweizen

    I only use White Labs liquid yeasts, but I have tried three so far... WLP300..Banana bombs..too much banana, not enough clove. WLP320..American Hefe...lowest clove and banana. In the fermentor WLP380...The best balance between clove and banana...My #1 favorite so far. WLP351...haven't tried it...

    Christmas Brown...critique?

    This beer has been in bottles for 3 weeks... Still not sure on the flavor. When I transfer it from the fermentor to the bottling bucket, it smelled a bit sour to me. However, it didn't taste sour. A tiny bit of the sour smell still exists. However, now I am thinking it might be the spices...

    Belgian Wheat.

    You are a few days away from the minimum time to try one...roughly 2 weeks. But 3-4 weeks would be way better. So hold off until X-mas like you say. I think the rule of thumb is 48 hours in the fridge before drinking...but, that is just a rule of thumb! :) Patrick
