I get up to temp, dough in - stir like crazy, and if im low on my temps ill fire back up , then flame out then put the jacket on. The jacket holds temps and only loses about 3~ degrees F over 60 minutes. Just gotta make sure it's on very SNUG. I used large Velcro squares on the inside bottom...
Thanks for the tip but it is already so efficient and fast I'm not gonna mess with it. Such a good chiller (But to anyone reading i use a hop screen bag so I've never had a clog. Just make sure to soak it and clean it after / before each use.)
