Calgary, Alberta. Though as far as I know this is the only province in Canada that gets Deschutes. So I get great variety and pay through the nose for the privilege.
I just brewed this up yesterday. Used beersmith to scale down to something in the 5%ish range. My mash temp was off a degree or two and OG was maybe 2 points low. Not anything I'm worried about. Here's hoping it tastes as good as the commercial version because I'm not too keen on spending...
If you can't get munich try to get vienna. They're fairly similar. But don't brew this with 2 pounds of crystal 60. That's way too much. It will definately not allow the beer to attenuate enough. I can't recommend you use that much crystal at all.
It's kind of hard to tell you if 3#s of honey is too much without seeing the rest of the grainbill. If you think that cal ale yeast is too neutral you might try the dry english yeast or maybe even scottish ale. I also hear that German ale is a good attenuator. But I've heard good and bad about...
People usually recommend wheat to aid in head retention. Whether or not it actually works is a whole other matter. Either way it won't hurt. However I would change one thing in your recipe. Move the cascade addition to the end of the boil. Either a 5 minute addition or split between 10 and 0...
I don't think Todd sells equipment, just ingredients. He does have a bit more in stock than his website shows though. Just send him an email and ask him if he has what you need. He's usually pretty quick to answer. I guarantee you won't be disappointed with his service.
I ordered a tonne of stuff through Todd. He's got a great selection and is really willing to order other stuff for you if he doesn't have it on hand. Yes Defalco's is very bad for ingredients but they have pretty decent brewing equipment. That's where I'd get carboys and stuff like that. But...
Though this guy isn't in Kingston he's in Ottawa. If you buy in bulk I'm sure you could justify the roadtrip (come to Ottawa and see some real hockey! :P) www.skinaneybrewing.com is his website. He'll also ship to you. He's a class act to deal with and I highly recommend him.
