    Kolsch or Kolsch-Style?

I keep reading that 'it is against the law to call any beer not brewed in Koln a Kolsch - it must be called a Kolsch Style'. I believed that for a long time, and then I swear I saw one in the LCBO (liquor store in Ontario Canada). A quick google shows the number of breweries that call their...

    Oops!!! Fermentation temp

I kegged my “hothouse lager” yesterday, and sampled some. I am really trying to find off flavors, but honestly I can’t. Certainly nothing to render it undrinkable. Maybe he heater i have is really slow and it did most of its fermenting in the 22-24C. Of maybe I just got lucky. Or maybe I have a...

    Warm Fermented Lager Thread

Ok, Here's my contribution. I posted this story on the Beginner Brewing Forums as well. On Dec 6th 2017, I made a Pilsner, and used saflager s23. I did not make a starter. Instead I used 2 packages of dry yeast. I did not rehydrate them. I have a fermentation chamber, which is a fridge, a...

    Oops!!! Fermentation temp

Thanks for all the help and comments. I don't take any advise as harsh. I understand why Morrey would dump it. He/She seems to understand why I wouldn't dump it - yet anyway. So I took a gravity reading, and its not quite at the expected FG, which I guess I was a bit surprised by, but I am...

    Oops!!! Fermentation temp

I have no intention of dumping it. I’m not sure why I would before I try it at least. I have more equipment if I want to brew something else. I have heard that s-23 is temp forgiving, however I assume 93F is not considered in range. :). I’ll let you guys know.

    Oops!!! Fermentation temp

I made a huge mistake, and I am concerned about the impact. I made my biggest mistake yet in brewing. Made a Pilsner, and used saflager s23. I just recently cleaned out my temperature controlled ferm chamber, which is a fridge and a reptile heating wire. Plug my fridge and the reptile heat...

The waiting is the hardest part

The waiting is the hardest part Every day you see one more card You take it on faith, you take it to the heart The waiting is the hardest part I wonder if Tom Petty(rip) was talking about home brewing. I think I have brewed over 15 batches (kits and extracts included) and I have never...

    Diacetyl questions

I tried it again last night. You guys are right. I keep reading to ‘relax and have a homebrew’ I tried that - tasted better.

    Falling under feces occurs...

The title made me think that you dropped your phone in your beer, and later realized that you dropped your phone in the toilet first - or something. I once was cooling my beer with my wort chiller copper coil, and the hose flew off the end of the coil and sprayed water from inside the coil into...

    Diacetyl questions

Awesome! Thanks all. I will not try to fix it or anything atm. I will try again in a couple weeks. I will post an update here.

    Diacetyl questions

Hey all, long read- sorry. I have read a lot about off flavours, and ‘in theory’ I know what buzz words are used to identify them. Putting it to practice is trickier. I think I may have Diacetyl in my latest brew, but if I do, it ‘appeared’ later than i expected. I brewed a recipe like this...

    Sour beer fail

Wow! What great information. That is precisely the off flavour. If I had to be honest, the off flavour was definitely more of an off Aroma than a flavour. However it's pretty hard to separate the vomit aroma from the flavour. Once you smell that, you also taste it. I may try another sour...

    Sour beer fail

On this past weekend I ran in an organized run called The Beer Run. It's a run consisting of 1000 people (4 waves of 250 people each) that do a tour of local breweries, by running from brewery to brewery. During this run each brewery gives away some beer and we drink at each stop. It's not a...

CO2 Manifold - use valve to throttle the pressure?

That distinction is subtle but certainly worth noting. As long as I'm filling bottles, (i.e. Letting the pressure out) it works out to about the same thing. However if I close the tap, the pressure will rise but at a slower rate. That makes sense. Thanks. I filled some a growler the other...
