    Yes you can, I personally think it works better that way than trying to raise the pot temp. That's exactly the same thing you would be doing of you were using a mash tun

    How much headspace on the top do you have? Too much space between the top of the water and the top of the pot might be where your having problems.

    Why not achieve strike temp from a mix of boiling and cold water?

    Correct me if I'm wrong but you can easily have water come up higher than the 212 it takes to start boiling. Hitting that exact mark for your calculations to be correct could be just as hard as hitting strike temp. Also I think that adding cold water would produce a lot more steam which would...
