Just took a gravity reading and it was 1010 so something has happened. Little bit of sediment visible at the bottom of bucket. Cider must just be a different breed to beer.

Hi guys.
Newish to home brewing as I've only done about half a dozen kit and kilos.
Here's my problem. I put a pear cider down at 3pm on Saturday and as of 6pm Monday there is still no sign of fermentation. Nothing from the air lock and no visible sign on top of cider.
How long do I wait...

If I add water to a fresh wort kit to reduce its alcohol content to something that the Mrs will drink, what effect will this have on taste?
