I would use a total of 7.5 gallons of water. You can probably fit 6.5 gallons of water with the grains in you pot and just add water after you take out the grains.
I have heard a few of the leaders of BIAB brewing on various podcasts talk about it and it seems like the big thing that is unique to the process is full volume brewing. Meaning ALL of the water used for the brew is added at the very beginning. The one guy (I forget his name) even said that if...
I am looking forward to doing my first wine kit. I have been brewing beer for a few years now.
To ensure a clean and not contaminated wine should I boil some water and use that for my top off water (cooled of course). Is this necessary? It seems like most people just use tap water or...
I do more of a brew in a sheet process. I bought a voile curtain from target for $5 and drape it over my kettle as I mash in and let the weight of the grain pull the sheet down. As I am resting I tighten it up around the kettle and twist it so it all is bundled into one area. This will make it a...

For a larger grain bill, you can figure out how much water you can fit in your kettle and fill it up to the top with the grains. You'll just have too add more water after you lift the grains out.
It is quite amazing how much water does not want to change temp. And with about 8 gallons of it along with about 12 lbs of grains I lose 2 degrees over 60 min without covering it with blankets!
James and Steve at basic brewing radio will be doing a brewing disasters show soon. You should write them. They did one a couple of years ago and it was hilarious.
I don't see how a dunk would change anything. Some people claim and increase in efficiency but other factor can influence a couple of points. The whole reason you don't "sparge" in BIAB is because you are actually sparing at the same time that you are resting and mashing out.
