I know its very hard to tell me what im doing wrong without seeing my brew day but what would you say would be the biggest culprit from boil to ferm that might get enough O2 in it that it would cause this in my beer? I have watched videos, books ect on how to brew...
When I pull a sample after fermentation is complete i can taste it in the sample before i even remove the beer form the carboy. I use plastic carboys and rubber bungs with the 3 pc air lock. As i do agree with you that it does taste like oxidation how the hell is it exposed to air from Cool down...

So I have brewed about 10 batches of extract now. I have only brewed IPA's and pale Ales. In all of my beers i have this same stale caramel off flavor almost like my LME is scorching or something but i know its not. I turn off heat and stir well for about 15 mins before...
I Have a light ale it has been in the carboy for a full 2 weeks. I checked the gravity Thursday morning and it's now saturday night 3 days later and the reading is the same but the airlock is still bubbling.... Is it safe to bottle or should I wait it out?

I'm about ready to bottle my first batch this weekend, anyone have any tips on cleaning and sanitizing. I heard oxyclean was a good product not only to clean bottles but to soak them in to remove the labels.
Also once bottles are clean is it ok to run a high temp sanitize...
Woke up this morning to an explosion in my ferm chamber.
The lid blew off the Airlock and beer was probably exposed to the air for about 5-6 hrs.
Do you think it got contaminated?
Now my carboy has some pretty nasty look gunk on top of the foam.

I have a couple of questions.......
1) How long does sanitizer last? I brewed yesterday and put it in a 5 gallon bucket with a lid on it, but not locked tight so it's been 24 hrs is it still good?
2) I brewed a nut brown ale last night and I got home tonight and the air lock was full...
I'm doing a full boil 6 gallons and using mesh bags for my hops. When transferring the wort to carboy should I pour everything in? At the bottom of the pot there is a bunch of green looking sludge. Does that go in to or do I stop pouring when I get to the sludge?
